Fantastic, must try if in Bristol. It is an intimate setting, full of tables which brings a lovely lively atmosphere to the experience. We had the wine flight which was a real highlight as everything paired fantastically and we learned something along the way. The homemade limoncello was incredible with the pre-dessert. The portions were good and we left full but not uncomfortable so. Ted our main waiter was fantastic and really looked after us too. Amazing all around.

Absolutely incredible experience. The food is sensational. The staff were impeccable with such a fine detailed knowledge of the food and how it’s cooked and even down to WHY it’s cooked that way. Very friendly and easy for any questions. It’s a very relaxed vibe and makes you feel comfortable as soon as you sit down. Now comes the food…wow. Taster menu of 8 courses and what a flavour experience. To all be so fresh and farm to table is inspiring and so creative in the way it is all put together. My final words would be thank you for such an unforgettable experience.

After watching every episode of Chef’s Table and Knife’s Edge, I can confidently declare myself an expert in unique and fine dining. No formal qualifications, just excellent streaming habits. Wilson’s, however, was genuinely exceptional. I know this because I drank every drop of the wine flight and can still remember the meal the next day, which feels like a Michelin level achievement in itself. Eight courses of meticulously sourced ingredients arrived in vessels so thoughtfully chosen that I found myself turning them over to see who made them. The opening fish head foam amuse bouche set the tone immediately. It was less “welcome” and more, “We’re very serious about food, and it’s only getting better from here.” I opted for the wine flight, and I can’t recommend it enough. If you’re dining here, do it. If you don’t drink much, bring someone who does and negotiate visitation rights to their glass each course. The introductions to each wine were a highlight in themselves. I nodded thoughtfully while listening to the stories of vineyards, soils and tasting notes, pretending I completely understood every word. Then I remembered… actually, I do. I’ve attended at least two wine tasting classes and watched Drops of God on Apple TV. Basically, I’m halfway to being a sommelier. Every course felt like an event, and every glass had a purpose. I was genuinely disappointed when the evening came to an end. Service was beautifully paced and never rushed, never slow. The team worked with the sort of quiet precision that makes hospitality look effortless. The dining room was lively without ever becoming loud, and I’d particularly like to congratulate whoever decided to install proper acoustic panels. Nothing ruins beautiful food faster than having to shout about it. As someone who notices these things, it was a full ten out of ten. Finally, thank you to the entire team for showing absolutely no judgement when I emerged from the bathroom having completed a full outfit change into my England football shirt. That’s the sort of seamless hospitality they don’t teach. Considering the standard of gastronomy placed before us, the pricing felt remarkably fair. I’ll absolutely be back. Outfit changes are now officially part of the tasting menu.

Probably the best restaurant I’ve ever been to. The food was creative, beautifully presented, and every dish tasted incredible. Both the wine pairing and the alcohol-free pairing complemented each course perfectly, which really elevated the whole experience. The atmosphere was warm and welcoming, and the team at Wilson’s were all genuinely lovely and attentive. I’ll definitely be returning over the next few months to try the new menu.
